The answer depends a bit on how you plan to tour. I would recommend getting a Disability Access Service (DAS) card when you arrive, but that is totally up to you and the needs of your children (more info here on that: https://blog.touringplans.com/2013/10/15/disneys-disability-access-service-definitive-guide/). If you get the DAS card, that will allow you easier access to many rides and the Touring Plans may not be as helpful. They can still be used for organization, but you wouldn't have to worry as much about the wait times.
If, however, you would prefer not to use the DAS card then our plans would definitely be useful. Specifically our Personalized plans where you can tell it what you want to ride and let the computer put it in the most efficient order.
