There are no definite answers although I will answer what I can. Many of the rides, especially the older ones, aren't wide enough for wheelchairs which is why there is a separate entrance. Now, the part I'm not sure of is if they'll let you just use the accessible entrance or if they'll make you get a DAS card. Either way, you don't have to use the DAS unless you need to.
As far as the plans are concerned, it won't mess with those much if at all. Any attraction where you use the accessible entrance will just mean that the wait will likely be a little shorter so you'll just be ahead of the plan by a bit. If you do have to use the DAS, that acts similarly to a Fastpass, where they will give you a return time equivalent to the wait time. The easiest way to deal with that in the plan is to add it as a Fastpass in the Lines app and re-optimize. But if you'd rather not do that or aren't going to be using the app you can just continue on with the plan -- going back to ride the attraction with the DAS return time won't take up as much time as the step would have in the first place. For shows there will be no issue with the plans as the only wait is generally for the next show anyway.
